Assuming the Saudi story were true about Khashoggi how does this help them?

Most states, if not all states, have some form of a felony murder statute that states clearly that if you commit a felony (kidnapping) that even accidentally leads to a death you are just as guilty as if you murdered on purpose. On top of that, they are apparently admitting to attempting to render him to Saudi Arabia and one presumes torture him like they did in the consulate itself. I don't get how this is any better at all.

It would be like in my drinking days saying no I didn't drink a half gallon of vodka only a quart this week.

I thought they'd just deny, deny, deny until the whole thing went away

On the other hand in the midst of their denial, big $$ players are bowing out of Davos in the Desert like hotcakes

Maybe they suspect it will calm the $$ people if they give them something, anything, no matter how horrific or preposterous.
