There are a set of rules... but the Senate made those and can change them at any time. The House does get to pick the impeachment managers who bring the charges... but that's about it.

The Chief Justice acts as the presiding officer where the impeachment was of the president or vice president (otherwise the vice president is the presiding officer), but he doesn't act as a judge; he only manages the proceedings by swearing witnesses and ensuring that the rules are followed, and is not involved in the Senate's decision. So yes, the Senate does have complete control once the matter goes to them for the trial.
