I do air drying for mine and don't use a dehydrator. You get to make flavors of your own and it seems to work for me. Just keep the air flowing around/over/under.

I use a clip on fan and a open rack and make about 1 pound a week. Mmmmmm

soy sauce, worsteishier sauce, balsamic vinegar. equal measures of each/overnite.

then I put the slices in a colander and let them drain, place them on a rack and under a fan. I use a small clip on fan and keep it about 6 inches above the meat. Sometimes I sprinkle a bit of garlic powder on them, or black pepper, or white pepper, or caraway seeds. I let the fan dry the slices overnite or at least 12 hours, The soy adds enough salt and I don't use more than 1/4 cup of each item in the marinade. I'm sure you could use store bought marinade but haven't tried that yet.

I use london broils, sirloin steaks, or whatever is fairly cheap at the supermarket. I get about 3/4 lb jerky out of 1 lb meat. I use an electric slicer and vary the thickness batch to batch.

Mmmmmmm good! and it's pretty nice having around.

to circulate the air around the strips. I lay them on an open grid bakers rack inside a baking sheet and the fan blows air down on them.

after 5 or 6 hours I flip them.

I make it and binge on it about once or twice a year.

Here's a recipe I got from a guy about fifteen years ago. It's a candied, peppered jerky that is really good. You don't have to get it exact and can experiment.

Start with a beef brisket.

Put it in the freezer for about 20-30 minutes so that it firms up but doesn't quite freeze. (This makes it easier to slice.) Slice it across the grain to a thickness of little less than 1/8". I like the slices to be a little thicker than thick-sliced bacon.

Remove the excess fat from the slices. I basically take a paring knife and individually cut away all of the fat from the outside of every slice. If you leave too much fat on, the jerky will be more greasy and will have a much shorter shelf life I've found. Still good though, imo, so leaving on a little fat is an option if you just want it for, say, a one-day treat.

Marinate the slices for 2 hours to overnight in a mixture of about 50% soy sauce and 50% smoke. I usually stray from the recipe here and add some Worcestershire.

After they are marinated, dehydrate the strips. I usually marinate overnight and put the strips in my Nesco dehydrator in the morning the next day. They you dehydrate them (there's a "jerky" setting on my dehydrator) until they are where you like your jerky in terms of chewiness.

Mix about a cup of brown sugar and 1.5 to 2 Tbsp. each of soy sauce and liquid smoke. Microwave until frothy. Stir and repeat until all of the sugar is dissolved.

Toss the strips in the syrup, coating them all thoroughly. Then put them back in the dehydrator for another 3-4 hours so that the coating completely dries.

At this point, the recipe calls for tossing the dried strips in dry spices. Hickory salt, white pepper, black pepper, crushed whole peppercorns, etc. I, personally go light on the hickory salt and black pepper but throw in just a little garlic salt.

Serve. It's pretty good.

Their products are too pliable and oily.
I like jerky firmer and drier.
Since I don't buy there stuff, I'll just stay with my current plan.

Maybe that guy needs to figure out how he's going to get a job after the Dolphins drop him and he's looking for his 3rd team since being a #10 draft pick just 2 years ago.

Cardinals drafted him and within a year realized he was terrible and traded him to Miami....Miami just a year later spends a top 5 draft pick on Tua Tagovailoa, which I'm pretty sure puts Josh here at #3 on the depth chart when most NFL teams only carry 2 QBs on the roster.

Good luck Josh. Might want to hang onto that money instead of passing it along to a conman.
