I trust Costco’s rotisserie chicken, until proven otherwise. Means there’s a lot of my old recipes are gathering dust, but so be it.

... near the thickest bone and will not remove it if any pink or red shows from the stab mark/hole.

I take the broth, skim off all fat, and make rice pilaf with the broth.

Then I broil the chicken in the oven on a rack to cook off any fats remaining. Some times I de-bone the boiled chicken and make a chicken salad in summer or mushroom and curry chicken when it is cold out.

Any salmonella or any other pathogens are killed off if sufficiently boiled or cooked at a high enough temperature.

Proper refer and prep area kitchen hygiene is important too. Always have a little container if warm water and bleach set up to wipe up raw chix drippings immediately and finally sanitize your hands.

...changing my apron afterward — then read there’s strains of salmonella that are resistant... and I just went well screw it.

With the rotisserie chickens (which are economical; apparently every supermarket makes its real money selling you the “sides” like potato salad) I tend to slice off the breast meat for immediate use because it is always cooked through, then proceed more slowly through the rest as I find the pink meat down by the joints. Anything suspect goes into a pot for further cooking, and all the bones go into another pot along with a package of Lipton’s onion soup mix for stock.
