Because it was clear the attackers were completely informed about timing, locations, and procedures, and that had to have been done through the phones. We saw them all with phones in hand: It was not a mob that thought their phones would be dropped, damaged or stolen: They were essential to the entire thing. And we all know what these phones cost: Yet the rioters weren't at all worried about phone damage or loss.

Anything held back, would presumably be to protect ongoing manhunts, etc.

That would be important evidence, and investigators and prosecutors don't usually disclose important evidence to the public while the investigation is in progress. This stuff should absolutely not leak.
