I don’t eat sausage, but my husband just realized he could make his own by buying ground meat from the butcher counter at the grocery store.

You'll have an infinite amount of recipes to choose from! I mix mine and then freeze the meat (I don't bother with casings and stuffing the casings --) in 1/4 # amounts -- easy peasy and no chemicals.

I used to help my grandmother make sausage. But, since my job mostly involved turning a crank all afternoon, I probably beat it for outside as soon as that part of the process was done.

And, since I didn’t like it, and still don’t, really, I have no idea how they stored it. I don’t think casings were involved, maybe just patties. I’m sure they froze it, as there was enough meat went through that crank for a small army.

Hubs will eat it any old way, so just looking for tips. Thanks!

like sausage shape. But I also do patties (breakfast sausage seasonings)
, and when I do the Italian sausage seasoning that includes fennel and garlic, I just break it up and put it in a cream sauce over pasta.

Do it!! You'll love the result!

I add merguez seasoning to ground lamb and freeze that -- nice to pull out of the freezer for something different (if you like lamb, of course!)

Alas, nobody in our immediate family has killed a pig for thirty years.

My great grandmas regularly killed animals of all sorts, domestic and wild, and turned them into dinner. All of them were hunters. Curiously, their husbands were not.

My wife is vegetarian approaching vegan. I'm mostly vegetarian and avoid factory farm meat for radical environmentalist reasons.

But if someone wants me to try out some sausage they made I'm likely to eat it...

Manufacture of those are held to a much lower level of quality control (not to mention also a much lower level of "truth in advertising" ) than vaccines.
