NOT TO DISMISS THE PAIN AND LOSS AND STRUGGLE AND INJUSTICE ONGOING, but for all of us who HAVE experienced loss...which is all of us... finding light and joy in what remains is essential. And we have such empathetic leadership now, that it's ok to celebrate, IMHO.

(1,106 posts)mmm, mmmm, good. My father and I used to catch Bluefish when the schools would move down the coast and that was our favorite way to cook them. Both very oily fish and oh my so good.
I'll take whatever the rest of the world's leaders don't know well enough to enjoy!!

That oil you mention gives it a richness. You do need to offset that with acid (lemon, tarragon vinegar, etc.) and the right amount of salt in a sauce.
I've made it. I also added garlic, paprika, (I use those 2 in nearly everything) rosemary, thyme, cardamom, pinot grigio & ground cayenne.
My wife loved it.

There's a famous chef, Mark Murphy, that wrote a book, "Season With Authority".
Never read it, but it defines how I cook!
Sure, all that oil carries with it some amines & amino acids that create that " fishy" flavor. But, that can be balanced.
My wife had the same concern, until she tasted it.
I'm no expert chef, but I can produce & balance flavors.
That said, I do have really good knife skills. Not like a top flight chef, but pretty fast, safe & precise.

(65,134 posts)Square cast iron that has a corrugated bottom, so it's a bit more like grilling. The entire cooking surface isn't touching the metal. Pan cooking, but with grill marks!
Haven't used it yet, though.
Back to mackerel: I bought one big filet. I made a surf & turf because I made bacon wrapped pork medallions in sherry.
Now, I've got 3 versions of surf & turf.

(11,564 posts)Sirloin is far from my favourite cut, and I usually slow cook it with a lot of flavourful items so it has some. The once or twice a year we have it. One thing for sure...you have to consciously try to go wrong with sundaes.
Are "Beach Hut Sundaes" a thing, or made up for the occasion? Also, do you think the buttered rum and marshmallows part of the sundae, or separate indulgences entirely?
