It has been 21 days since the concert in Central Park.

Daily reported Covid cases in New York City have declined during that period.
The seven day average for reported new cases in the City on Aug. 20 was 1868. On Sept. 10 it was 1528.
I looked for articles about Covid and the aftermath of the concert but couldn't find anything.

Are large college football games helping top reduce hospital visits?

Probably not.

Maybe large outdoor gatherings are not the vector for the spread of Covid? Possibly.

Will people continue to predict doom and gloom every time there is a gathering they disagree with? Undoubtedly.

and the quality of the data one has at their disposal with regards to making said assertion.

Sometimes it's difficult if not impossible to ascertain the difference

In either state until August. Sometimes bikers hang out indoors in bars and restaurants.
The last I heard there weren't a whole lot of cases attributed specifically to Sturgis, though.

Argue with that.
Here's a link from late August with the number of cases then specifically related to Sturgis at that time. Make of it what you like.

I'm not saying Sturgis had no effect but it's not responsible for every case in the region. Gathering indoors unvaxxed and unmasked at crowded bars, restaurants and indoor rock concerts isn't something I would do. Just riding around on a motorcycle outdoors probably isn't too risky.
