I have a guy that's arguing that it's impossible to know the ages of people hospitalized because it violates HIPAA

This applies to covered persons releasing medical info on a specified person

I was tested on this every year until I retired so I know for sure it's no privacy violation, no release of individual information, just an aggregate.
