one ream weighs 5 lbs. 20lb refers to the weight of one ream of "basis size" (17x22) paper -- each sheet of basis is cut into 4 sheets of 8.5 x 11.

3000 / 5 * 500 = 300,000 sheets

That's incredible if I did that math right.

It's probably not 3000 lbs of paper, but the total weight of all the paper, the binding material, the cases and whatnot.

I could be wrong, though.
