Tonight, at our house, it was shredded beef tacos:
(1) leftover pot roast,
(2) lettuce and tomatoes,
(3) tortillas
and our "one other thing" was homemade lemonade.

I make dry beans in an instant pot with sausage and onion. It will last me 4 days and is cheap.

(1,988 posts)Definitely a comfort food for me. It was cheap, because I mystery shop. I had Daves Hot Chicken takeout for lunch - free due to mystery shopping. And I had 4 strips of bacon for breakfast -approximately $2.

(66,143 posts)Publix (yeah, I know) had black beans for $1/can so I stocked up thinking just something to have for the craving and then have in storage for when it was needed. Without trying to eat to a budget or super frugally, I was surprised at the math. I figure my lunch of black beans and rice, with several dashes of Sriracha, cost me about 75 cents a meal. Granted, I don't eat big meals (I eat 5-6 smaller meals a day). That said, I'm just cooking/eating for one, so not providing for a family of 3 or 4, etc.
