I keep trying this wonderful looking chocolate around here, but it always tastes like it was made with bullshit.
I'm hoping someone will share a better recipe.

(111,267 posts)The only chocolate ice cream I've ever been able to taste any chocolate in is Breyer's unless the chocolate has been supplemented with candy or brownies mixed into the ice cream.
That's what I suggest you do with yours, mix in some chocolate chips or something.

(90,704 posts)...little electric ice cream machines. I made a lot of my own recipes, too, but that book is good.
I never got that good at "hardening" the results, so I always made it to eat on the spot. Also, my notes indicate I had a persistent problem with graininess when I made chocolate ice cream.
I emphasize chilling the mixture in the freezer because if they are not really cold, the ice cream maker never gets up to speed.
My all-time favorite was vanilla:
3 Cups half and half
1/2 to 1 Cup sugar, depending on taste
1 Teaspoon vanilla extract
Chill ingredients well in freezer, then pour into ice cream maker.
This worked for chocolate:
1 Cup buttermilk
2 Cups half and half
3 squares semi-sweet chocolate
1/2 Cup sugar
Melt chocolate in microwave, 1 minute at a time
Mix with sugar in saucepan
Add 1/2 Cup half and half
Heat until a smooth sauce forms
Refrigerate well.
Chill all ingredients in freezer. Whip together, chill some more.
Pour into ice cream maker.

(36,827 posts)The only part that is remotely difficult is making a correct custard, but if you are proficient with custard making skills this should not be that much different.
The basic ingredients are sugar, egg yolks, dairy (milk and/or cream), and something to flavor it with. Beware of recipes that use other ingredients.
If you want good chocolate ice cream, use good cocoa powder. This is the one I use:

(1,232 posts)then be from pure cocoa powder. It doesn't have to be top quality but it must be pure, 100% cocoa. You then add your sugar to sweeten.
If you want to use chocolate bars, find the ones that are at least 70% cocoa or the unsweetened and then add the sugar to your own taste.

If you're looking for a deeper flavor then add several grams of chocolate powder. I'd also toss in some really dark espresso or some grains of instant espresso or a good quality instant coffee.
Jamie Oliver always seems to nail the recipes right, now I want to make this one!!!!!
