(60,024 posts)I like my cream of carrot, or squash, or cauliflower soups a lot (easy, homemade from scratch, slight variations of each other). Carrot has a hint of orange, squash and cauliflower of curry (use of garam masala)

(15,805 posts)If I have time, I'll make my own white sauce, but those condensed soups are very useful when I need cheap, fast menu ideas. Cream of Mushroom soup used to at least taste like mushrooms, but now it's just congealed goop, bland and tasteless. Cream of Celery and Chicken still taste the same, so I substitute those.

(12,051 posts)now. I used to eat it regularly as a young adult; about 15 years ago I ate some and had to throw it out, it tasted so horrible.
The same thing happened with Kraft boxed mac and cheese -- for many years, a favorite meal was that plus tuna. Then in the past few years, it changed and is now inedible. Even to young adults like my son and his child -- they can't eat it now, either.

Making your own mushroom soup is a pain in the ass, when you just need something hot and filling for lunch on the fly.
It has its place. I love good food and fine dining, but I will also eat a pizza puff or a paper-wrapped, cornmeal tamale.
I ain't no snob, and I WILL survive the zombie apocolypse.

(6,856 posts)One of my favorite dishes as a child was chicken casserole made with cream of mushroom and cream of celery. Loved it until I was old enough to make it. Cutting raw chicken revolted me. Could not look at any of the ingredients the same after that. But still have to say chicken casserole with cream of mushroom was a pleasant meal for many years. Good cold weather food.

If you like it as a soup, Amy's makes a mushroom bisque you might like even better....

(9,275 posts)But you can sub cream of celery in any recipe calling for the fungus stuff. I make the obligatory holiday green bean casserole with cream of celery, sublime. My daughter who actually likes mushrooms makes hers with cream of celery also.

I have found decent generic brands of mushroom soup, one of which I used last night in the crock pot with sirloin pork chops, some dried onion soup, and veggie broth all cooked up and served over egg noodles along with a caesar salad. Delish!

One day, I decided to make TWO cans of the stuff..and I got very sick!

(10,164 posts)I learned how to make a white sauce - now I use that along with fresh mushrooms and maybe some cream. Used to use it a lot for casseroles, but white sauces have taken over there as well.

It will keep in the fridge for 4-5 days, but it never lasts that long. I have used this for tuna casserole & as a base for chicken & rice.
I use the BudgetBytes recipe from the website. I get no bennies from them, just good food. 2 forks up🍴🍴
