Traditionally made into a sorta pie or veggie patties. Take any type of left over meats - ham, bacon, sausage, etc. (this is not to be the main ingredient) - throw some already boiled leftover potatoes (this is supposed to be the main ingredient) mash them together with any left-over veggies (already cooked leftover cabbage, brussel sprouts, carrots, etc.) and fry them up.
Throw an egg on top - as shown - if you'd like.
Had B&S in Canada several days a few years back, with poached eggs and they were delicious.
