Related: Culture Forums, Support ForumsIt's so hot here I am making a cold salad plate dinner tonight. Here are my ingredients:
sliced cucumbers
grape tomatoes
sliced radishes
sliced celery
cold hard boiled eggs, halved lengthwise
cold cooked shrimp
canned tuna (chilled a bit)
cold tiny peas
cold pinto beans if I have them
pitted black olives (medium)
All over a plate of mixed leaf lettuce
I use evoo and vinegar as a dressing.
Anybody have another suggestion to put on this delightful summer dish?

(63,768 posts)My arthritic back prevents me from standing too long. I do this salad using some time-outs for me to sit so this takes a bit of time. But so worth it, IMO.

(15,805 posts)I'd make a Green Goddess since you already have the cucumbers, or maybe a creamy Caesar or Italian dressing.

There are any number or recipes for Green Goddess Dressing, and my typical recipe variation uses the ingredients I have on hand to make a creamy, tangy cucumber dressing with some California favorites added to spice it up. Its all good, a light and refreshing dressing for all kinds of salads and veggie dipping for hot summer menus.
1 clove garlic
1 tablespoon fresh dill
1 jalapeño, ribs and seeds removed
1 cup packed cilantro leaves
4 green onions, green parts only
juice of 1 lime
1/2 cucumber, seeded, grated and squeezed to remove excess liquids
1/4 cup sour cream, greek yogurt or buttermilk
salt and pepper to taste
Directions:
Puree the garlic, dill, jalapeño, cilantro, green onion tops, lime juice in a food processor. Next, blend in the cucumber and just enough sour cream to get the desired smooth consistency. Put the mixture into a storage bowl and add salt and pepper as needed. Cover tightly and let chill in the fridge for several hours.
