black beans, kidney beans, black-eyed peas, chick peas, adzuki beans, cannelli beans...

I think what I like most about them all is how full they make you feel. And you stay full.

I bought some vegetarian ones at Whole Foods and I melt some jack cheese over them w/ salsa and have them w/ tortilla chips. Very yummy!

..stone ground mustard stirred in. Add sliced Trader Joe's Apple chicken sausage sautéed nice and crispy brown, and then bake in the oven until bubbly.

Black beans, kidney beans, pinto beans, aduki beans, green peas & green beans (not overcooked), lentils, chickpeas...

All are just fine by me (and I eat a LOT of them in my dishes)

46. Homemade baked beans

2 cups Yellow-eyed pr great northern beans
1/4 pound salt pork
1 onion
1/3 cup brown sugar
1/3 cup molasses
4 teaspoons dry mustard

Soak beans overnight in fridge - change water 3 times
Parboil beans in 3 changes of water until no foam appears and you can "blow the skins off" (this deprives the beans of their musical powers)

Add beans to pot
Add all ingredients on top
Add water to cover

Bake at 225 degrees F for at least 12 hours (or more) - add water if needed.

simmered all day. We ate them frequently when I was growing up. When I moved to Boston, I could only find navy beans which are NOT the same. I also could not find decent white cornmeal for cornbread. When I visited home the first time, I returned to Boston with 5 pounds of white cornbread mix and several bags of white beans.

Since I moved to Texas, I have become a fan of barracho beans, which are really just pinto beans seasoned a particular way.

We make 15 bean soup in the winter

Yep. I don’t like the yellow cornbread either.

My girlfriend is from Cleveland and can’t stand the white cornbread. She has lived in the South for 20 years and makes the best beans.

Ham hock in a pressure cooker wth Great Northern, Pinto, Lima almost any of them.

So I eat the yellow cornbread any way. It’s not horrible but just a little too sweet

They are a big staple in Italian cooking. Great for pasta fagioli or greens and beans. Also great in soups!

I love good refried beans.

I also like baby Lima beans, cooked into a soup with ham.


Art Bell hated Lima beans, but his mother insisted that he eat them.
So what he did was to eat each bean, one by one, by swallowing them whole, washed down with a big gulp of milk.

I miss Art Bell.

Each summer a little farm stand would open and sell fresh-picked butter & sugar corn (the kind with mixed yellow & white kernels) and fresh beans in pale yellow, dark-pink-speckled pods, called horticultural, or shell beans in New England, and Cranberry beans elsewhere. They were a favorite of my dad's.

Succotash-
Prepare shell beans by removing the beans from their pods. Cook for 1 minute in a pressure cooker, or 15 to 25 minutes in a tightly covered saucepan in salted water, 1 inch deep. Boil fresh corn on the cob for 2 minutes, then slice it off. Mix the beans and corn and season with salt and butter.
