Seems a scullery MAN did the heavy lifting tasks in the kitchen - carrying coals, cleaning ovens, lifting crates, etc. The scullery MAID did the dish washing, cleaning veggies, helping the cook, etc.

Esp. in hot climates.
The hoop skirts at least kept the material off the lower body.
