I have discovered "Just Break an Egg." I am here to report my findings.

They make different varieties, the difference is one is bacon, the other sausage. IDK what's in the other one.

Today: the ingredients are in little plastic bags inside the cup. You open them and dump them in the cup, then crack and egg and beat them all together in the cup with a little fork. Then they go in the microwave for a minute or so to whatever consistency you wish.

I toast up a whole wheat English muffin to go with it.

Had one with my coffee and OJ this morning. A bit of a hassle, but not much.

I like this breakfast a lot. I like a really good breakfast and this has all the food groups I like.

I will feature my Belgian waffle breakfast treat in a few days here in the Lounge.

Tomorrow: a whole grain toasted English muffin with veggie cream cheese from Dunkin Donuts, courtesy of hubby who ventures out Sunday morning for copies of the Sunday Hartford Courant and the Boston Globe. We read 4 Sunday papers. I do two crossword puzzles.

Can you fit two eggs in there and increase the cooking time? BusyBeingBest Mar 2020 #5
I guess you could. I use a very large egg so I can't tell. Two regular large eggs would be fine. CTyankee Mar 2020 #6

The ingredients contained add up to a few cents, yet in the store, these little cups (at least in my area) were over $3 each, without the egg.

Yikes. Good ide, but makes me more willing to slice and dice the veggies myself.

put them in small (1-2 oz) airtight containers which I then freeze. Works great for soups and omelettes.

Aside from the cost, I don't like bell peppers in pretty much anything so the only one I tried was the All American Scramble (potatoes, cheddar cheese, and bacon) and the texture of the potatoes was just not right.

You're paying for them to cut up the ingredients and divide them up into serving sizes. If I wanted to have an omelet type thing, I'd prepare all the ingredients, divide into packets with enough for a single serving in each and freeze. That way I could select my own ingredients.

To substitute for the All American Scramble sans potatoes, I'd just buy pre-cooked bacon bits to sprinkle in my eggs with shredded sharp cheddar and maybe cut some green onion tops or an herb into the mix. If I wanted potatoes, throwing some frozen hash brown potatoes in the pan first would work great.

Personally I dislike microwaving eggs so I'd throw an egg into my tiny frying pan, sprinkle the ingredients on top and cook until done - if I planned ahead, I'd take a one serving packet out of the freezer and put into the fridge the night before. If I forgot to do that, I could drop the frozen packet into the pan just long enough to thaw it, then put the egg on top.

From a video on YouTube I was inspired to come up with a low calorie/low carb egg dish. Heat a small frying pan (have one that will cook an egg just big enough to fit on a slice of bread), sprinkle in shredded cheese (I use sharp or extra sharp cheddar), cook until it is melted and just starting to bubble, break an egg into the middle (you can slightly beat the egg if you don't like sunny side up). Cover loosely and cook until the egg is as done as you like, loosen and slide out onto a plate. You can add bacon bits or whatever you like on top of the cheese before the egg. I used to spray with Pam before the cheese, but the cheese has enough oils that it really doesn't stick once it browns slightly on the bottom.

This gives some crispy-ish texture and with a sunny side up egg, something to eat with runny yolk with.

It doesn't puff up too much during microwaving. With two eggs you'd have to cook them longer of course...

They knew it was a good product. Military technology in C-rations had made the egg transportable and powdered. They couldn't sell the ready made "just add water" cake mix. Focus groups (we've always had them) showed that yeah we like the product but we feel guilty about the ease and convenience. These were children of mothers who did everything from scratch. So they added step 3 (or 4) Add 1 egg. Scales skyrocketed.

i like them also, there's 2 different brands offered but almost the same
i try to catch them when on sale, 2/$5 etc
like you, single need easy fix, and to buy all the ingredients veg/cheese/meats etc plus use them all before they spoil ... eggs will last, and i don't eat one
everyday...
and to the poster above, it's enough with toast, muffin for me

✌🏼

I buy the big bag of prewashed spinach at Costco. Put a little olive oil in a skillet, toss in a handful of spinach. When the spinach is about 3/4 braised, add in an egg or two, scramble the whole mess. Put it on corn tortillas, slather with hot sauce, roll up and eat. Takes 5 minutes.

It's very good, actually! I was surprised.
