Special grilled cheese

I made spaghetti pie, roasted broccolini and (homemade) focaccia bread last night.

The leftover focaccia bread is being used for an artichoke/spinach grilled cheese sandwich.

About a month ago, I made some focaccia to go with dinner. I’d spotted the recipe for the grilled cheese and figured I’d try it for the next day’s lunch. I told Dh that I was making a special grilled cheese sandwich the next day. When he had the sandwich, he thought it was fantastic. The day after that, he asked when we were having the special grilled cheese Apparently to him it’s only grilled cheese if it’s on bread with cheddar cheese.

This isn’t that- it’s even better.

He knows better now.

I usually use a pie dish but I was making just a bit last night so I used a very small casserole (enough for 4 servings).

I used 3 oz of spaghetti, broken into smaller pieces. Cook, drain and then add back to the pan. Add 1 Tbsp butter, 1/4 cup parm/Romano/whatever plus a well beaten egg. Butter the small casserole dish and form the spaghetti mix to make a bit of a crust with a center well.

From there, I winged it. I like ricotta but you could choose cottage cheese. Put a thin layer in the middle and then cover the dish with marinara. I added about a Tbsp of cooked crumbled Italian sausage to the sauce before covering the cheese and noodles. Cover with foil and bake at 350 for 20-25 mins. Remove foil and sprinkle some mozzarella on top and put it back until melted/brown if you’d like. Let set for a few mins and then slice.

(We generally don’t have both pasta and bread in the same meal but I wanted the grilled cheese today...)

Recipe looks really yummy. I love pasta and husband can’t eat tomatoes, so this looks like a great workaround. Looks like I could substitute an Alfredo-type sauce for the marinara.

I love noodle kugel and this sounds a somewhat similar idea.

I make a spinach, ricotta, noodle pudding and I love the texture of the noodles/spaghetti when it's baked.

(I never have left over spaghetti..... I always eat too much when I make it )
