Puttered around my garden this morning

for just a few minutes.

Pulled two beets, the rest of the snap peas and some green onions.

For lunch today I roasted the beets using the air fryer. Sautéed up the stems and greens from the beets along with some shallot and sliced garlic (just harvested some hardneck this weekend) and some freshly squeezed lemon juice. Had some leftover rice and black beans, so I piled it all on there. DH took all the pea pods so I guess I don’t get any of those He’s not fond of beets so it’s a fair trade.

I love summertime garden produce.

in a few days. And we’ve had enough lettuce (Romaine, leaf, oak leaf, and curly endive) for a salad every day. Eleven tomato plants and two cukes will be producing in a week or so.

It’s wonderful to just make a trip out the back door for your dinner, isn’t it? Not only super fresh, but organic, too!
