Breakfast potatoes sauteed in olive oil, with onion, garlic & green / orange / red peppers (or any of them!). Super yummy! Just had some with an omelette.
On Edit: added olive oil. 👍

(57,073 posts)For the breakfast potatoes, I make a huge frying pan full & have plenty for 2 days. As with most foods, they are even tastier the next day, since the flavors blend.
Double baked..

(25,969 posts)The potato is so versatile that it goes just about anywhere. On the other hand, its hard to beat the simple pleasure of a baked potato.
If I have to choose, let it be creek bank potatoes.

(31,525 posts)rolled it up. It's even good cold. We had a little wood cook stove and my mom would cook it directly on the surface, just like a griddle. Lacking that, a dry cast iron skillet works well.
