Damn it was good!
Loaded Potato Soup
Ingredients:
2 cloves minced garlic
1 chopped onion
1lb bacon, cooked and diced - reserve bacon fat
5lbs of potatoes, cubed
1 Tablespoon of Pampered Chef Rosemary and Herb or any rosemary and thyme blend
Chicken stock 32-68oz
2 cups of milk (any type of milk alternative will work)
2-4 tsp salt (to taste)
2 tsp pepper
4 Tablespoons cornstarch (you can leave this out)
Optional: Chives for garnish, sour cream, shredded cheese, green onions
Instructions:
Cook bacon and reserve grease
Add 1-2 Tablespoons of grease to Pressure Cooker along with garlic and chopped onion. Turn cooker on to sauté/sear. Cook until translucent and aromatic.
Add 1 quart of chicken stock and chopped potatoes.
Add 1 tablespoon of Pampered Chef Rosemary and Herb seasoning (or rosemary and thyme blend) and chopped bacon.
Add enough broth to cover potatoes
Add salt and pepper
Lock lid on Pressure Cooker and seal valve. Set to manual for 8 minutes.
Mix cornstarch with ½ cup of the milk and set aside.
When its done, vent the Instant Pot for quick release then push the sauté/sear.
Add all the milk and cornstarch slurry.
Cook until thickened.
Serve with sour cream, cheese, and chives

I added 3 tablespoons of butter, also added shredded carrots & celery and for the chicken stock I used Better Than Bouillon Roasted Chicken Base.
I used to use my dad's recipe (depression era) which is pretty tasty, but this recipe is rockin!

(34,125 posts)I made some too just last night. I was trying to remember how my dad made his, so good and very plain. Failed. I have not tried soup in my Ninja but everything else I have tried in it worked really well. I will try this next.

My son is staying with us since he has work here but not where he usually lives. He would eat this every day if I made it. I double the recipe every time and it is gone the next day.

My mouth is watering. I need more Garam Masala before I can make this again. We have gone through 2 jars since March! (canning jars, I keep larger amounts of spices in canning jars)

(7,694 posts)It's not necessarily hot, either, unless you want it to be. It's an ancient cuisine, and the flavors are put together ALSO because they help digest! I've just discovered lentil (and all sorts of other bean and grain, non-gluten ) crackers, flatbreads, chips -- omg.
BTW there's an Indian instant pot cookbook.
