I don't know how many here like to cook, just a quick change of pace

I found chef jean-Pierre on YouTube. Seems a sweet gut. I watched him make a pork tenderloin and he insists you cook pork @145F. He says there are people on the net who insist on cooking it at 180F and he thinks they should be shoemakers instead of cooks. Funny guy!

It’s about a blogger who tries every recipe in julia’s Cookbook. Very interesting look into history of the blogger and the chef!

It was charming and enjoyable.

I generally only do that with something toothy and drooly you need to kill with fire

Every woman I know swears by her - especially when it comes to preparing those richer dishes than require more subtleties.

Personally, I avoid pork - but I've learned not to contradict La Bella Contessa.

But, I refuse to eat pink pork. Or a pink burger either. Yuch.

Now, steak I love medium rare. Yum

I just can’t seem to find a solid Cuban sandwich from local restaurants that deliver. Then, out of the blue, one did, I was all over it, I ordered one. It was indifferently prepared with little attention to the pork. I think I was sick for three days.

Feb 2021

pork, lamb, beef, veal - steaks, roasts, and chops - 145 degrees
fish - 145 degrees
ground pork, veal and lamb - 160 degrees
egg dishes - 160 degrees
turkey, chicken and duck, in pieces or whole or ground - 165 degrees

Myself, I like pork a little more done than that and eggs a little less done, but these temps are safe and a good guideline.

I keep getting short vids with Jacques Pepin in my Facebook feed, they are very watchable and seem like things I would cook and enjoy.
