(22,264 posts)like pinto beans and cornbread, turnip greens & cornbread, a classic vegetable plate (green beans, summer squash, sliced tomatoes, a dish of sliced cucumbers marinated in vinegar, corn on the cob, and cornbread of course). Dessert was usually some kind of pie. or cobbler made with whatever was in season. (no cornbread)
If I had to do a one item food truck, it would be chicken and dumplings. The first booth to sell out at the Evansville IN Fall Festival was the St Agnes Catholic Church chicken and dumplings. Those were extraordinary and you had to get there quickly. They also sold their dumplings dried and ready to cook, and no matter how many were made in advance, they sold out very quickly.
If I went with a Texas theme, I would have breakfast burritos in the morning, chili for lunch and brisket in the evening, but only if I were at the Fall Festival. Otherwise I'd go with the brisket.

(1,109 posts)I would use old-fashioned Hit & Miss (John Deere engine-powered)] ice cream freezers to make and sell only vanilla ice cream on freshly-made cones.

(21,758 posts)We had a pizza place open up that bought a few old ice cream trucks and re-fitted them so they could sell hot pizza slices. A shame they only lasted about two years but man... I really loved to hear the pizza truck coming by

(20,202 posts)The kind of thing people would grab as a quick bite to last them until lunch or dinner. Austin has a food truck called "Hey Cupcake" that sells cupcakes for $3.50. You used to be able to get a "whippersnapper" where they shot it full of whipped cream for $1 more, IIRC, but they don't do that anymore. I've heard the quality isn't as good as it once was though. It's been around since 2007.

1 meat and only one set of three. The selection would change the next day or week. Might have a very small choice of desserts, though.
