So, I'm pretty sure I don't know what I am doing.

I was offered a new position months ago which was a lot more money with some excellent benefits. It was described to me as one thing and has morphed into something else after it was too late. Now I just feel trapped in a job I don't understand and nobody seems to care that I am just "winging it". The training was awful, my mentors sucked, I get very little feedback and every single day I am hoping it starts to click. The sad part is, I came in to the position with some others who were picked from within the company and that seems to be the case for nearly every single one of us.

How the heck did I get here? And what the hell am I doing in this hand basket? I shouldn't complain when so many are unemployed, but I just had to get this off my chest.

"And if so, is there a book or reference manual that I can use?"

Ask someone you can trust to get some real feedback. You may be too hard on yourself. Conscientious people are sometimes their own worst enemies.

There are some jobs that are always going to feel like. They're cutting edge jobs, like with computer software programmers who are really flying by the seat of their pants, breaking new ground.
