(23,097 posts)It's so awesome! Just add chopped up chili peppers & cheese, can include onions too, and it's divine.

(23,097 posts)Mexican cornbread and my homemade chili is one of my favorite meals in the winter - so warm and delicious. I usually add extra cheese & it melts on top of the chili and man oh man! Yummy!

(36,460 posts)It's green chile season & down at the farmer's market you can watch them roast the green chiles. I like cornbread with red chili, too.

(12,904 posts)I ate it almost every day as a youngster.
But I take mine in muffin form. More crispy edges.

(5,168 posts)Cornbread are square! (One of my dad's sayings) My mom baked her cornbread in the oven, not in a skillet.
Cornbread also should not be sweet, then it becomes cake.

(15,806 posts)Basically cornbread with some zest added in, plus added blueberries to the batter. Once cooked (in cast iron of course!) I add a bit of lemon drizzle on top (lemon juice and some powdered sugar). The cornbread soaks it right in, making the bread a bit sweet but not overly so. Its just enough that you really dont need to add honey to the cornbread.
