Breakfast sandwich riffs?

One of mine is capicola, provolone, and a fried egg on an English muffin with pesto mayo. 😋
On occasion I’ll use a chiabatta roll.

1. You're way fancier than me

A slice of bacon, halved. A fried egg. And half a slice of some kind of cheese (not American). On an English muffin with mayo, microwaved when I got to the office.

2. Cheddar, poached eggs and bacon in a very lightly toasted Greek pita.

5. You can poach eggs?

I bow to you. Not being sarcastic. If I could poach eggs, I'd eat them every day. Maybe more than once a day.

14. I use silicon egg poaching cups in boiling water.

15. Does the top get cooked?

Do you scoop hot water over the top? Also, is it easy to get the eggs out? I bought one of those but have never used it. I may try.

16. I spray the cups with Pam.

I have scooped hot water if the egg doesn’t seem to be setting, but usually 5-6 minutes in boiling water does the trick.

6. One of my childhood friends had a very unusual homemade breakfast sandwich

It was a hot dog, sliced and pan-fried, in a bun, topped with a fried or sliced hard boiled egg, slathered with Mayo. The name? Dick Dog Sandwich. I took a hard pass on that concoction.

12. Not just for breakfast

But somtimes I have a real taste for tuna salad on a toasted everything bagel, with thin slices of green pepper, a mound of mild banana peppers, and some black olives & spinach.
