This is the first year of gardening for me ever and look!! Finally I have a vegetable - a baby cucumber!!

I took that pic just last night - they were conceived last Sunday. I'm already getting the nursery prepared with salt and pepper and butter.

(1,675 posts)I can just go out in to the back yard and pick blueberries or summer squash, zucchini, broccoli, cucumbers, spinach, lettuce, and soon tomato's and peppers. I also have basil and rosemary and thyme and oregano and parsley.

Of course as I write this, I dreading trying to figure out what to do with the ton of lemon cucumbers, who is it that has not been stuck with some? YET?
At least with the tomatoes, well you know you're getting an abundance when the joy of that taste of fresh, turns into "Gonna stew some tonight".

... as a "Japanese Cucumber Salad" -- halved (seeds scraped out if necessary), sliced VERY thin and
marinated in rice wine vinegar with a little sugar (or sweetener) sprinkled in the marinade.

BTW, balsamic vinegar -- ESPECIALLY aged THICK b.v. -- is supposed to be EXCELLENT on vanilla ice cream.

I'll be trying that soon -- though I can't afford the aged kind anymore (it's aged in wooden kegs, like Scotch --
even the times are similar (12-, 20-, 30-year aging).
