Cast iron is heavy and would take up room I don’t have in my galley kitchen. I cook a lot but not the kinds of foods that benefit from the use of cast iron.

I use it in the winter to sear steaks on the stove. I use it in the summer to cook fish on the grill. It’s versatile and cleans easily. Perfect for braising.

I can't believe I did that. I saved some cast iron old fashioned irons for my sister because they were heirlooms and my sister had room to display them. Bit damn if I did not go shopping for a Dutch oven a few years later and almost fainted when I saw the prices.
