(13,571 posts).....then remove one paper and you can lift the crust with the bottom paper and turn it right over into the pan.

(13,571 posts)I've been making my Aunt Dorothy's pie crust for thirty years. It has earned me fair ribbons and three proposals of marriage (which I did not accept.) And I was the pie baker for my son's espresso cafe for a few years.
Right now I have a rhubarb pie in the oven. I love to make pie. My favorite -- Gravenstein apple. The most requested when I baked for the coffee house was peach, which I make with a wee splash of bourbon. I was surprised that peach was the most asked for here in the PNW.
I wish it was easier to post a photo on DU than it is. I'd love to see lots of pie pictures.

Or smaller. And the water is ice cold!
Your current weather matters. How much water you need. High humidity and low humidity make a difference.
I can do a great crust but not so good on the filling unless it's rhubarb.

(20,586 posts)and it usually the first in Spring! People always want me to make them a rhubarb pie but I haven't been very successful growing it. Last year it was $4 lb!

(22,270 posts)I am a very good baker, cake being my specialty. However I am not that good with pie crust. My mother was the master. My crust tastes fine but looks like it was hit by a train.
I make a very good buttermilk pie, pecan pie, chess pie and German Chocolate Pie. Those are all easy fillings.
Coconut Cream is my favorite,
Love cobbler! Cobbler crust doesn't stress me as much because it is not really supposed to look pretty and you just can't beat those nice corners! (I double crust my cobbler)
