I realized half-way through simmering my caramel, that my thermometer was not working properly.
First I worried that it wouldn't set. Then I worried that it would break someone's tooth.
All is well.
This is one seriously rich/sweet dessert.

Had to do a quick dessert tonight. Had sugar cookies on hand. Topped cookie with walnuts and put a dark chocolate square on top.. microwaved for 10 seconds twice. Then added vanilla bean ice cream on the side.
