Hot Sauces - Your "Desert Island" favorite?

Over the decades I've tried tens of different mexican style hot sauce brands and we keep at least eight types on our fridge door at all times.

However, my general go-to sauce and Desert Island fav would have to be Tapatio.

How about you guys?

Others that rotate in & out of our fridge:

Cholula: Reg., Chipotle, Sweet Habanero (fav) varieties.

El Yucateco: Green and Red (yummy, but funky preservatives though)

Pain Is Good (no it's not, waaaaay too hot)

Melindas, Reg.

Pico Pica: Hot and Taco sauces

Dancin' Skeleton

Tabasco Reg.

Mezetta Taco (red)

La Victoria Green

No longer buy:

Frank's Red Hot
Crystal
and a bunch of others

I selected franks, but I go with their Buffalo it has a little less burn that the original Franks.

I like most of them, hell, even Taco Bell sauce for certain applications (like Taco Bell tacos).

Mix just about any one with sour cream for a decent dipping/topping sauce.

Going to have a lot of coconut and seafood to work with. Maybe taro. A little sriracha would work well!

some good ol Tabasco on hand, as well as the underrated Crystal. Also some brand of Chipotle or jalapeno.
Ha.....forgot Sriricha....a poster above reminded me. Can't leave that out.

I prefer my hot sauce without thickeners, and Tabasco is the major non-thickened sauce.

More limited applications I find.

FYI- Tapatio has no thickeners like La Victorias does.

Melindas is one of the best hot sauces. I too have about a dozen hot sauces on the fridge door. My go-to is Melindas original habanero. It tastes good with just about anything. It bites but doesn't burn. Melinda is your friend.

As per hot for Mexican food I would rank the following;

1) fresh pepper would be Serrano... hot but not drop you to the floor hot

2) dried from the garden. Long Tom Red Pepper
Pick em, hang em, and grind up over dishes you are cooking.

3) sauce ... a good Chipotle red sauce

Just love it. My wife orders it for me for Father’s Day. Hot, but great.

Cholula Chipotle and Siracha also go to’s.

If you like Cholula, try the Chipotle Sweet Habanero, too.

Heck, at least try Tapatio! The stuff is cheap, too.

I thought of another that I really like for fish tacos:

Coopers Leche Diablesa

It has a coconut lime vibe and has a little pop. It’s local to me in CO and I got it at a farmer’s market in town, but they sell it on Amazon and other places. They have some good flavors. If you can find it, Try the variety pack that comes in shooter bottles

I keep Tapatio, the original Tabasco, Sri Racho, and currently a jar of Trader Joe's Hatch chile salsa on hand. When I make chicken wings, I mix Tapatio and Tabasco with butter until it seems right.
