even though the price for corned beef has gotten insane, only got a couple point cut pieces - so we will probably not even have any leftovers.

A lot of people believe Thousand Island dressing is the proper sauce for a Reuben. Not so.

Combine:
a half-cup of ketchup
a half-cup of mayonnaise
salt and pepper to taste

and then...

Add horseradish until your eyes start to water.

Mix well.

Fortunately, one of my favorites, too. Every year when the corned beef goes on sale, I buy a few extras to go in the freezer. At $3 a pound, it's one of the cheaper meats that I like.

On Monday I have a whole day with nothing scheduled, so I'm going to put it in my Traeger and make a pastrami out of it.

I'm going to try something a bit unusual here...you have to soak a corned beef for a while to get the salt out of it, so I'm going to soak it in a relatively inexpensive red wine. One of two things will happen: it'll turn out absolutely awesome, or it will take one bottle of low-end wine out of the hands of today's impressionable youth.
