Boil water to a rolling boil. Add spice. This will take some experimenting to get the right amount. Put in the fish bring back to a rolling boil. 10-15 minutes or until fish flakes. Remove from heat. Allow to sit in water for 15-20 minutes. The longer it sits the more spice it will absorb.
I had the leftovers for breakfast. So good.
I ordered some bay seasoning with no salt.

6. Fish boil! My family is from there

and my uncle did fish boils on the beach at family gatherings. You use whitefish and potatoes - it's very Scandinavian, probably a tradition of the original Norwegian settlers (my great-great grandfather was one of them). Delicious and not at all like lutefisk.

A couple of that family's sibs have moved there permanently. They lived in the Chicago are, but were and still are always frolicking in Door County.

Back in the 70s and 80s I would join the sons on occasional weekends up to Sturge, in all seasons. Great fun and my first fish boil back then too. Ma and Pa Nelson had a cabin on Carp Bay

The sons would bring back salmon from snagging in the fall. trout and salmon on downriggers too year round except when there's ice. They would do much ice fishing, though. They would ski and snowmobile, or just chill at the cabin in the winter.
