I grew up in a family of 14. I peeled potatoes at least 4x a week. Yes, part Irish. 😉

7. I avoid peeling potatoes whenever possible

I am literally begged to make mashed potatoes at family gatherings, however, and any hint of peel in the mixture is like kryptonite to some people.

but some batches of russets (and some sweet potatoes) are so scabby, thick, or otherwise unappetizing that they have to be peeled.

10. Oh ah only baby new reds for mashing with skins. Others are for baking or casseroles or sweet

14. Yukon Gold are also good for cooking with skins on. They are my favorite potato.

Those big Idaho russets are still the best for baking though.

And I eat the skins from baked potatoes.

My daughter shocked her Persian in-laws when she ate a baked potato skin! "You eat the skin?!"

bright red and itch even if I use a peeler. There’s something about the wet potato. Got me out of some peeling as a kid. Now I use gloves.
