Fried eggs rather than poached, cheese (preferably Gouda) rather than Hollandaise. You can vary it, of course, and I saw one variation mentioning Monterey Jack, with slices of avocado. I've put fried eggs on ham on bread before, but never with cheese. Will have to try that.
