The stress of hard-ass dietary restrictions (unless strictly necessary) is life-numbing and limiting.

So have some ice cream (if you like it) when you can really savour each spoonful, not for comfort food (but even that very occasionally).

but plenty of cheese and yogurt. For a while the dairy producers were complaining that their milk wasn't selling. They can just make more cheese and yogurt then.

I remember the news had some problem in Italy where some region had surplus cheese that needed to be unloaded fast before it went bad. So they got chefs to put out lots of cheesy recipes and encouraged restaurants to cheese up their dishes and told people it was patriotic to buy the cheese.

Without the fat in dairy, your body cannot adequately utilize the calcium and magnesium. Too much "fat free" eating can lead to vitamin deficiencies.

Often fat is replaced with sugar in some form, to make sure there's some flavor.

Also, it's easier to feel satisfied after eating a relatively small amount of full fat whatever.

This is similar to why sugar free soft drinks are so terrible. The stereotype of someone drinking a sugar free whatever while eating three donuts is not entirely exaggerated.

and the results aren't usually positive. I tend to be very leery of "substitutes" as a rule. Once in the store I actually saw "Fat Free Sour Cream"!

Well, no food or supplement is magic. And the only foods that are poison are the ones someone is deadly allergic to. The rest of us can eat them, thank you very much.

I have my own food quirks, likes and dislikes. For me, cilantro tastes like soap, so I've learned to ask in many restaurants if it's in a dish. I am not allergic, and I take pains to point that out. But I get very angry at those who tell me, "Oh, there's only a little cilantro in this dish." Tell you what. I'll only sprinkle a few soap chips in your food, not a lot. Okay? You'll be good with that, right?

Oh, and the "Fat Free Sour Cream" not only probably didn't taste much like the real thing, I bet if you looked at the ingredients, you'd find some interesting stuff.

Dieticians are the worst. Anyone who tries to convince me that the fat free version of yogurt tastes exactly like full fat sour cream and I won't be able to tell the difference, clearly has non-working taste buds. I've all too often gotten nonsense like that from dieticians. If you are fine with that particular substitution, well good for you. I'll stick to the real thing, thank you very much.

Another huge issue is that servings in restaurants are humongous, far larger than they should be. I have long since resigned myself to either ordering only an appetizer, taking home half of the meal, or simply knowing half or more won't be eaten. What I like about cooking for myself is that I can control the portion sizes.

No such thing! There are few foods that I absolutely hate, but cilantro is #1. According to my DNA test results, I am predisposed to dislike cilantro and yes for people like us, it tastes like soap, not food. My daughter is the same way, but my son has no problem with it.

The problem with "Fat Free Sour Cream" (aside from the taste I assume), is that technically it is not cream if you remove the fat! And you're right, when they take the fat out, they add other stuff in, that is probably far worse for you than the fat.

Another example of adulterating our food is refining the crap out of them and then adding back a few synthetic vitamins to compensate for all the natural ones they took out along with the fiber. As a rule, I find that 'less is more' and don't trust the companies that are selling you the food to be truthful.

I also get a kick out of seeing the processed foods that have The American Heart Association recommendation on the package.

I've known for many years, decades probably, that cilantro tasting like soap is genetic. A bit like curling your tongue (which I can't do) or attached or unattached earlobes: I have one of each which is incredibly uncommon. Haven't met others with that condition other than both of my sisters and my mother. Alas, none of our brothers or the next generation has the one of each. Oh, and a while back when I was taking a genetics class at a junior college, and the thing about specific genetic differences came up, including the earlobe thing, the professor absolutely refused to look at my ears. Sigh. I could be famous, right?

As for processed foods having the AHA recommendation, really? Why? What are they thinking?

Here's the real thing: Cooking from scratch is often portrayed as time consuming and difficult, but it truly is not. You need a bit of organization, but even that doesn't take very long. Remember Jamie Oliver? One of his shows, he talked with a man, a single dad, with a couple of kids, and he'd normally go off and buy fast food for everyone at more than one place. Jamie set up fixing dinner from scratch, and when dad came home from the food run, Jamie and the kids were outside goofing off. Dad assumed it was because they'd given up on cooking. Nope. It was because they'd finished cooking everything and had time to goof off.

Cooking really isn't hard or complicate. Plus, depending on what you like, it's not very hard to cook things that will freeze up to be reheated later.

And I am not remotely a fanatic in terms of organic or vegan or anything like that. I'm simply willing to fix real food, with real ingredients. It's not hard at all.

as possible. It is just me, so I don't do much cooking anymore, but the food I do eat usually is unprocessed. I don't have the physical energy to cook and clean these days and eating is something I do to stay alive, not so much for pleasure. I make an oatmeal concoction that is full of nutrient dense stuff (flax meal, sunflower seeds, wheat germ, raisins, flax seeds, and brewer's yeast) and then I add yogurt and fruit. I feel like at least I'm sure I've gotten most of what I need, which is important as I really don't eat that much these days. I always have nuts and cheese to snack on.

I found out I hated cilantro years ago when we had house rabbits. I often bought them cilantro and plain parsley, both of which they loved. Sometimes I'd take a bite of the parsley while feeding them and one time I accidentally bit into the cilantro thinking it was parsley. My god, that was the nasty stuff I've ever eaten! I've never understood why anyone would add it to any dish. The flavor permeates everything.

I still enjoy some chocolate and a cookie now and then!

We had over 100 cheeses from around the world, well mainly Europe and US.

Occasionally someone would ask if we had any fat-free cheeses, and I’d reply “all of our cheeses are fat-free. You buy the cheese, the fat is free”.

carry away the junk. By some researchers and physicians' accounts, fat is no longer the main problem. Sugar is because it leads to metabolic syndrome, and that is figured in cancer, heart disease, cardiovascular disease, dementia, stroke. Hindering your liver with sugar, no surprise, leads to adverse outcomes.

Sugar's evils were kept hidden by the sugar and sweetener industries. There is no unified fat industry so that was an easier target to demonize. People all over the world eat tons of fat without being as fat as Americans.

When the fat is taken out, something else needs to be put in to make it taste good, as you've said. And that's invariably sugar in some form.

I am certainly not a person who grows my own food, who goes to farmer's markets or only buys organic. But I do try do minimize the processed food in my life, and I think I'm doing a decent job of it.

Were I to eat more salads, I would seriously need to start making my own dressings.

people seemed to do very well.

Most junk food in the stores are filled with carbohydrates and maybe that is the cause of so much of our obesity. Maybe if people ate more cheese instead of chips they would lose weight. Oh yea they now have chips made from cheese!

one of the things that doesn't bother my stomach. And I love cheese.

And butter? I buy great butter and use it liberally. I think it is the carbohydrates that cause weight gain and things like diabetes anyway.

All too often people will generalize from one or two examples. The "don't eat cheese" is one. A fair number of people can't eat cheese or digest lactose, and so they assume that's the case for everyone. Nope.

I have the enormous good fortune to have zero food sensitivities. There are foods I don't like, and so don't eat, but that's entirely different. I have never in my entire life (74 years and going strong) ever had any kind of intolerance to a food. I have once or twice had mild food poisoning, which is totally different.
