They are a lot more self-aware than we think and are usually in on the joke. This one's a real comedian.

I take care of dogs for a side gig, so I see this behavior a lot. Basically for dogs staring in they eyes when they are close together is perceived as a challenge or a threat, and when they look away it is showing submissiveness or even kind of an apology for doing something they know is wrong. So this is normal behavior. If the dog did not look away I would actually be a little worried that guy was about to get bit.
