(102,304 posts)topped with plain yogurt and chives is not bad--and I scrub the potatoes well so that I can eat the lightly olive-oiled skin (prior to baking)for the fiber. I am sensitive to carbs so I don't eat them often, but...

(84 posts)My dad - when hes lucid (Alzheimers) - will weekly make his mothers potato salad. It - along with her spaghetti - is a family fave. Mostly his time in the kitchen keeps him grounded and present. As his 24/7 caregiver its nice to see life in his eyes by virtue of family, food and history.
BUT! I hate to conclude that my favorite potato dish is my leek potato soup. Packed with spicy pork sausage, mushrooms, heavy cream and vegetables, a fork should reliably stand vertically within it even while its hot. Best made with a combo of potatoes to utilize the benefits of different starch molecular weights.
Its a winter food, though.

(22,037 posts)Potato salad, both German and otherwise, is great but so are French fries. I love Hasselback potatoes but scalloped au gratin knocks me out. Mashed and baked are great, too. So many more!

They were wonderful and they were served in a cast iron skillet that after I dished out some
they would put the cast iron dish into a slot in the chimney of the wood stove to keep them
warm.

I'm a decent cook but I have not been able to duplicate their scalloped potatoes and onions
recipe( (In my case it was Zurs Austria) where I was served the very best
Fried Scalloped potatoes and Bratwurst I've ever tasted...on top of a mountain.

. little ridges of snow of about 2 to 4 in height. I got to the bottom and I didnt fall but it wasnt
pretty. Once was enough it was a tough ski.
The restaurant where I got the scalloped potatoes had a lazy Susan with 4 different types of
sauces for the beef. Chives and cream cheese along with other awesome stuff. 🎿

My grandmother made the. best. damned. gravy. I'll never forget it. She only made it when she fried chicken, so it had a lot of fat in it - but I was too young to care. Best part was that she put in the "cracklins" from the bottom of the skillet. OMG, that was the best smash & gravy.
(The other part of the tale is that when she fried chicken, every doorknob in the house was greasy. We lived with it - it was worth it.)

(54,414 posts)My wife makes sautéed potato slices, lightly done in olive oil with a few onions, and then tossed briefly in cajun spice, then finished over low heat (so as not to be at all greasy).
If I had nothing else to eat for the rest of my life, I could survive on that.

(5,814 posts)The best potatoes I have had from a restaurant were from a French bistro in Salt Lake City in the mid 1990s. They were mashed potatoes that had been seasoned just right and then fried so that they were somewhat crisp on the outside and moist on the inside and not overly oily. My wife and I were celebrating one of our early anniversaries and it was meant to be a special night at a nice restaurant and it was- perhaps that is why I enjoyed the potatoes so much, along with the beef tournedos and the rest of the meal.
The favorite potatoes outside of a restaurant were my mom's German potato salad, which she learned from her mom in Germany. They were wonderful. My sister used my mom's recipe to make some for us when I visited her last summer. Nice!
The favorite potatoes that I make are fairly simple yet delicious. I take some small Yukon gold or the small red potatoes and cut them in half. I add a bit of good olive oil, some kosher salt, pepper, and Italian herbs and mix together to coat them. Then I roast them in the oven until done, turning once. The outside will be slightly crispy with a nice interior and relatively few calories compared to some other potato options.
I also fondly remember some pomme frits with gravy that were served in a little German restaurant in St. Ilgen near Heidelberg. The fries were perfect and the gravy a thin gravy, possibly made with paprika, that I would die for.

And let's not forget POTATO CHIPS - Lay's Sea Salt and Cracked Pepper flavor rocks! Most bags have several chips that are curly and twisted, and they get stuck to other chips so they are extra think and crunchy.

spent in the woods. We would pack
some food for lunch, sandwiches, Slim
Jim's or jerky a couple of canteens of
water. We also would bring several
foil wrapped potatoes, salt and pepper
shakers and butter. We built a small
camp fire, using dried leaves and twigs
and matches we snuck out the house,
then started laying on larger branches
until we could see the red embers.
We would put the potatoes into the
base of the fire then would goof around for
a while swinging on vines or sending
someone on a snipe hunt. After about
twenty or so minutes we would retrieve
our freshly roasted potatoes and play
hot potato until we could unwrap the charred foil from the spuds. The smell of the potatoes and the fire really added to our enjoyment of the meal we created by
ourselves. Magical days and memories!

2 bags baby reds boiled, halve them (cut) and halve the largest ones again...
2 hard-boiled eggs diced
5 cloves garlic minced
1 med red onion diced
The juice of 1 lime
2 Tbsp Dijon Mustard
2tsp Dill weed
mayo to coat...
Put in freezer for 45 minutes, then move to fridge...
and Vichyssoise
LEEK AND POTATO SOUP (Serves 6) (From The James Beard Cookbook )
5 or 6 leeks
5 tablespoons butter
3 cups diced potatoes
1 quart chicken broth
Salt to taste
Cayenne
Nutmeg
2 tablespoons flour
Trim and wash the leeks thoroughly to remove all sand. Split lengthwise,
then cut in thin slices. Sauté in a large saucepan over moderate heat in 3
tablespoons of butter for 4 minutes. Add the potatoes and broth, bring to a
boil, and reduce to heat. Cover and simmer till the potatoes are soft. Season
to taste with salt (the broth may provide enough), cayenne and nutmeg.
Drain off the broth and reserve. Purée the vegetables in a food mill, ricer or
food processor. Combine again with the broth. Melt the remaining 2
tablespoons of butter in a saucepan over low heat, stir in the flour, and cook
for a few seconds. Add 1½ cups of the soup and stir until the mixture is
thickened. Stir back into the rest of the soup, and bring to a boil. Serve with
a dash of cayenne or nutmeg.
VARIATIONS
Do not purée the vegetables, but leave them in coarse pieces in the
thickened soup.
*Vichyssoise: Prepare the soup in the main recipe and allow it to cool. Blend
in 1½ cups heavy cream. Chill thoroughly. Serve with a sprinkling of
chopped chives
