(10,006 posts)We would eat lunch there maybe once a week. It was a tiny, no tables, stand-in-line joint that always had a 10-15 minute wait for your order but damn well worth it. Back then, its location was in a part of Denver you might not want to find yourself in after dark. Their version of a MH was one of the best in town, the other being a bar/restaurant, no longer there, near 7th and Sante Fe Drive.
Ive not lived in Denver for 45+ years but at my last visit, I was in the neighborhood and was pleasantly surprised to see that Chubby's was still there, in the same spot but with a fancy, new sit-down establishment. Of course I stopped in, ordered their Mexican Hamburger and am happy to report it was exactly as I remembered. That area has a safer vibe then I remember too and looks to be just slightly more gentrified.
I dont know about Pueblos Slopper, but next time in NW Denvers 38th & Mariposa neighborhood, I say stop in at Chubbys and see for yourself.

(12,368 posts)The space at 753 Santa Fe Drive -- most recently occupied by Club 753 -- is once again dark. But the address deserves some time in the spotlight for one very good reason: It was here that the Mexican hamburger, a major Colorado contribution to the world's culinary scene, was invented.

Santiago's is another good place (2-min. from my house) when in town, numerous locations, take out only or limited seating.

(10,006 posts)If you parked on Sante Fe, you'd have to walk through the lounge to get to the counter in back. This born and raised Denver boy didn't know they invented the darn things - they sure were good. If I remember right, the Ducati dealership was just north a couple blocks and if you needed used parts, Plue and Sons wasn't much further.
Once again, thanks for the memories and next time we get back there, we'll have to check out your recommendation of Santiago's.
Edit: My wife is a retired nurse. Back in those days and after a long graveyard shift, her and her pals would hole up at the Satire on Colfax for some Mexican comfort food - and sometimes get hammered too. She swears the food was great back then. I only ate there a couple of times and wonder if it is even still there.

had a good Mexican burger xmas style in a tiny crossroads town - Datil, NM. good spot in the middle of nowhere. traveling west on 60 after the VLA. fun to come up on that unexpectedly!
