This evening I made a dish that my mother made when I was a kid that I haven't had for more than six decades.

It’s cubes of stale bread, celery, and onions, with lots of pepper baked in creamed corn. I don’t recall any of my relatives or anyone else for that matter making it. I doubt that it’s a recipe my mother created.

BTW, it’s delicious! 😋

and hid it in a drawer. My mom served it sometimes. I never got used to it but squash and onions were the only two foods I was allowed to boycott. So into the napkins the creamed corn went.

BAKED CORN PUDDING
□   2 (10 oz.) pkgs. frozen corn
□   3 eggs, well beaten
□   1 tsp. grated onion
□   1/4 c. unsifted all-purpose flour
□   2 tsp. salt
□   1/4 tsp. white pepper
□   1 tbsp. sugar
□   Dash of nutmeg
□   2 tbsp. butter
□   2 c. light cream
□   1 (4 oz.) can pimentos
Preheat oven to 325 degrees. Lightly grease a 1 1/2 quart shallow baking dish. Combine all in large bowl; mix well. Bake 1 hour or until pudding is firm or knife comes out clean. Serve hot.

I use regular chopped pepper, and milk though. It's 'licious!
