My kids are in for a treat this morning

My wife has a doctor appointment this morning which means that I'm going in late for work so that I can watch the kids. I got up at my usual insanely early time and I got to thinking that I'd try to do something extra special with my girls this morning.

I just put the finishing touches on some crunchy oatmeal covered french toast bites that I experimented on making and I have to say that they are absolutely delicious. If anyone wants to recreate them, I used:

2x eggs
1/2 cup of milk
1/2 tsp cinamon
1/2 tsp salt
1/2 tsp vanilla extract
1-2 TBSP brown sugar

Mixed it all in a bowl, cut up 6 or so pieces of old wheat bread we were getting ready to throw out into bite sized pieces, threw them in the bowl and let everything soak for a few minutes while the stove was heating up. In a large pan, I added way too much oil to cook the french toast bites in med-high heat.

A minute before I started to cook the bites, I dumped 2x packets of instant oatmeal (I used the maple brown sugar flavored ones this time) into to the bread that was soaking in the bowl and mixed it thoroughly. There was little liquid left in the bottom of the bowl as it was all soaked by the bread and oatmeal.

When the oil was up to heat, I dropped individual bites into the oil and fried them up until they were dark brown on all sides. They turned out amazing.

After we are done with our breakfast I have plans to make a mock gingerbread house out of cardboard and paper. I'm going to make the shape of the house and then I'm going to have my 2 and 4 year old daughters decorate the individual sides. It's going to be a blast.

I'm just really excited about spending some quality time with my kids. Now I just need to wait for them to wake up!
