I tried to make wine once in a milk jug... did not work out so well. I would never had made it as an alchemist.
Btw: keep updating and let me know how it turns out! 
I also brewed up an Oktoberfest as well...
I also figured since I was brewing today; that I'd try a peach 'moonshine' recipie (Everclear-based) I've got that on the stovetop now:
