We have two rhubarb plants. I harvested and froze some stalks a couple of weeks ago and then went out to second harvest yesterday. Someone had helped themselves to about 75% of my rhubarb. Booo. I was immediately reminded of the 'crazy rhubarb lady', video that's been going around. So I was able to get one small batch of jam and then saved enough for one pie. Next year I am keeping a very close eye on my rhubarb!

(4,299 posts)'cause my Okie-side family taught us kids we would die if we ate it raw. Obviously, they were a bit off.
Rhubarb leaves contain poisonous substances, including oxalic acid which is a nephrotoxic and corrosive acid that is present in many plants. Humans have been poisoned after ingesting the leaves; such poisoning was a particular problem in World War I, when the leaves were recommended as a food source in Britain.
Rhubarb that has been affected by severe cold should not be eaten as it may be high in oxalic acid which has migrated from the leaves, and can cause illness.
