If you plan on listening to them on a high end home system, you would probably want a higher bit rate. On a mp3 player I doubt you would be able to tell the difference. At least I can't, but my ears are not what they used to be.

Higher is generally better. 128K is roughly radio quality, 320K is better and basically indistinguishable from the original CD for most people. But also take you speakers/headphones into account. It's possible that you might not be able to tell the difference with a pair of inexpensive earbuds.
