English Peas

So what's so special about English Peas anyway? How do they differ from regular peas, like the frozen kind?

Costco had some so I had to buy them and now I'll have to look up what to do with them to preserve their specialness. I remember a Top Chef episode some seasons back where English Peas featured prominently, maybe I'll have to go look that recipe up.

Honestly, I have no idea what they are or why they may be better than any other kind of pea and I have a pretty extensive organic garden...
