I'm thinking about beekeeping, and I wonder if I can figure a way to use the bees as

Get a strain of those berserkers and I guarantee you'll never have intruders. Downside: you probably won't be able to leave the house without wearing a full HAS MAT suit. They're not fussy about targets of opportunity.
