(20,176 posts)Also, if you're doing it right you don't actually want all the water out, only about 97-99% of it.
The remaining 1-2Tsp. of water contains a fairly substantial amount of starch; if you're finishing and saucing in a saute pan, that starch remains as the water cooks off and adds a lovely creamy silky texture to your dish.
(This is the sort of amazing crap you learn growing up in a restaurant kitchen. I was observant and learned every damned thing one chef or another wanted to teach me.)

Thanks for the bit of starchy water tip though. I'll just scoop out some of it before I drain my pasta in my colander.

(19,374 posts)Works better that way. I tried flame broiling some pasta and it turned out pretty crunchy. Stick with boiling and you'll be fine.

And, yes, when all you steamy hot taters hit that metal you do lose a little flesh and then you get hosed, but it's not the damned colander's fault.
