There's not so much of the filling, and often the pecans are chopped a bit or smaller ones are used. It makes for a nicer treat to have with coffee or tea

and simply used a normal Pecan Pie recipe with a homemade pie crust. I'm not that good at pie crusts, so it shrank from the edges a bit, but overall it was delicious. Plus, I found making a tart is easier than making the pie as sometimes they take longer to cook and set up, and you just have to know when they're ready...

Mom would stir together the sliced apples, sugar, cinnamon, raisins and sometimes pecans. When it was piled into the pie plate and draped with the top crust it looked as high as the Rocky Mountains.

But it all cooked down to a syrupy delight and the crust was light and flaky, just waiting for a large dollop of vanilla ice cream.

Mmmm. And apple pie is still my favorite.

For nut pies: Pecan!
For creams pies: Coconut Cream!
For fruit pies: Apple!
For gourd pies: Pumpkin! (although technically, it's a fruit )

I never developed a favorite, all I know is that it has to be made fresh and made with quality ingredients.

My mom got the recipe from our next-door neighbor almost 50 years ago and it is mind-boggling. The filling is melted marshmallows and whipped cream with crushed chocolate chips folded in and the crust is graham cracker. Un-freaking-believable.

Homemade pecan or apple also rock the house.

But I'll take a slice of pecan pie, a little scoop of ice cream on the side, and a piping hot cup of coffee. Serve it at the lodge at Multnomah Falls, and I can be one happy gratuitous.

Multnomah Falls is a lovely place, and we took our volunteer house residents up the trail to the top of the falls last month. Unfortunately, we didn't have enough time afterwards to go get a slice of pie.

Mmmmmm. Pecan pie.

One of these days, I'm going have to bicycle out there. That will earn me activity points to offset the pie!

But....Key Lime (really love the KL's from Publix's bakery...yum), pecan pie, and Derby Pie.

Derby Pie was promoted as THE pie of the Kentucky Derby...and they are quiet expensive...and in fact are really nothing more than a pecan pie with chocolate chips. Decadent.....
