Boiled, sliced and fried, even roasted. They have a slightly sharp, sweet flavor. Dressed with butter, mmm. YMMV.

in some water with the parsnips and turnips they make a GREAT soup. And don't forget the greens. Both parsnip and turnip greens are edible.

Wow! You must live in cooler climate. Parsnips and turnips are generally fall/winter crops. We're just starting putting in seeds now.

I was planning to also plant for a fall crop, but I'm way behind on work in the garden, yard and pastures due to July weather that won't give up. I'm probably not going to harvest any more of them until the weather gets cooler. But I was curious and in need of a change!

I included the turnip greens with my sautee, but wasn't sure about the parsnip greens. From now on they'll go into the mix too!

I'm not a fan of parsnips, but then I really don't like any sweet vegetable. Hate sweet potatoes, etc.

Love slightly sweet veggies with buttah...that magic combination of sweet, salty and fatty, lol.

And sweet potatoe pie make a great dessert!

I don't know what it is, though, I have a thing about veggies being savory. I like 'em with onions & garlic.

Enjoy your garden!

you might like Butternut Squash pie. I worked on my recipe for two years and FINALLY got it right. I'm going to enter it into the fair this year.

I'm dieting so all of that stuff is a no-no. I'm such a food addict I'd love to be able to take just a sliver and no more. Not gonna happen. I could down the entire thing, by myself, in one evening. No problem. Which is why I'm dieting.

I don't know why exactly but I've hated both turnip and parsnip every since I was a little kid.

My wife on the other hand would be over in a flash to try out your haul.

I'm glad they turned out well.

I made Cornish pasties one time and the recipe called for diced potatoes and rutabagas. Honestly, you couldn't even taste a difference between them and the potatoes once the pasties were baked.
